Many games that have uncapped vs capped fps runs are runs where uncapped fps completely breaks the game (usually physics based boosts and stuff like that). For Crash, the difference would be really subtle (at least at the moment), so there's nothing too special about an uncapped fps speedrun. Besides, frame rate does not really matter in the slightest when it comes to a single player platformer, as long as it stays at a steady 30 there shouldn't be any issues at all. PS.: And a question unrelated to Crash: Is there any lag in the PS Store like the PS3 has? It's a bit slow, yes, but it's noticeably better than the PS3 store.
